This skillet dish is unbelievably good, hearty and easy. It's the perfect dinner to make for busy families.
1 1/2 lb. red potatoes, scrubbed clean
2 T. olive oil
4 links good quality chicken sausage (12 oz.) cut in 1/2 inch wide rounds*
1 medium onion, diced
1 red bell pepper, diced
1 green bell pepper diced
2 cloves garlic, minced
salt and pepper, to taste
Cajun seasoning, optional (or substitute rosemary and/or garlic powder)
Boil potatoes in a large pot of water for 15 minutes or until they just start to become fork tender. Run under cold water or place in refrigerator to chill. Dice potatoes after chilled.
In large skillet over medium heat, add olive oil. Add potatoes; cook until lightly browned on edges and are completely fork tender, about 15 minutes. Add sausage, onion and bell peppers. Cook until sausage is browned and vegetables are tender. Add garlic; cook for about 90 seconds.
Serve, seasoned to taste with salt, pepper and Cajun seasoning.
4 servings.
*Kielbasa sausage can be substituted for the chicken sausage.
