Everyone will want seconds of this delicious casserole. It's easy, quick and is the perfect dinner to serve your busy family.
1 lb. ground beef (or ground chicken , turkey or Impossible burger)
1 small onion, chopped
1 t. garlic, minced
½ t. garlic salt
2 T. taco seasoning
4 oz. can green chilies
1 can black beans, drained and rinsed
1 c. frozen corn
2 c. sour cream
24 oz. jar salsa
9.25 oz. bag corn chips like Fritos or tortilla chips (reserve 1/2 c. for topping)
2 c. shredded Cheddar , Mexican cheese or combination of Pepper Jack and Cheddar
Topping choices: sliced black olives, chopped tomatoes, shredded lettuce, chopped green onions, sour cream, crushed corn chips
Preheat oven to 350 degrees. Spray the bottom of a 9 × 13 inch baking dish with non-stick cooking spray.
In a large skillet, brown ground beef, chopped onions and minced garlic. Discard excess grease. Add garlic salt and taco seasoning; stir to mix. Stir in beans, corn and green chilies; stir until heated through. Set aside.
Pour the corn chips into the bottom of the prepared baking dish. Spoon the ground beef mixture over the chips. Add the sour cream by spoonfuls over the meat mixture; spread around evenly. Pour the salsa over the sour cream. Evenly sprinkle Cheddar cheese over the top.
Bake 30 minutes or until cheese is melted. Let cool for 10 minutes.
Serve with choice of toppings.
