Meatloaf doesn't just have to be made from ground beef. It's tasty, easy to make and is a great change from the typical meatloaf.
2 lb. ground pork
2 eggs, beaten
1 pkg. Stove Top stuffing mix for pork
1 pkg. Mccormick's pork gravy mix, optional
1 c. water
1/2 c. chopped or grated onion
1/2 t. salt
1/4 t. black pepper
Preheat oven to 350 degrees.
In a large bowl, beat eggs; add pork, onion, stuffing mix, salt and pepper.
In a small saucepan, prepare and cook gravy mix as directed on package. Add half of the cooked gravy to the meat mixture. Set aside the remaining half of the gravy. and keep warm.
Shape the meat mixture into a loaf or two; place in 1 or 2 greased loaf pans.
Bake 1 hour and 15 minutes. Remove from oven; discard any grease.
Top meatloaf with remaining half of the warm gravy. Microwave the gravy for 30 seconds to warm it, if needed.
Serve.
