French Dip Sliders with Au Jus

Ingredients

3 T. unsalted butter
1 medium onion, thinly sliced
2 t. fresh thyme, minced
1/4 t. kosher salt
1/4 t. black pepper
12 sweet rolls
10 slices provolone cheese
14 oz. sliced deli roast beef
1/2 c. unsalted butter, melted
1 1/2 T. dried onion soup mix
1 packet au jus gravy mix
3 c. water
freshly chopped parsley, for optional garnish

Preheat oven to 350 degrees.

In a large skillet, melt butter over medium heat. Add onions, stir to coat in the butter. Cook, stirring occasionally, 12-15 minutes until onions are soft and browned but not burned. Add thyme, salt and pepper; stir; remove from heat; set aside.

Carefully remove rolls from the package, leaving rolls intact and not separated.

Slice the rolls across horizontally in one piece to separate the tops and bottoms.

Place the bottoms, cut side up into an 11x7 baking dish or rimmed pan. Top with half of the cheese. Add the roast beef; evenly top with onions; add remaining cheese. Place the tops of the rolls on top.

In a small bowl, stir together the melted butter and onion soup mix. Evenly brush mixture on top of the rolls.

Cover loosely with aluminum foil, making sure the foil doesn't touch the rolls.

Bake 25 minutes. Remove the foil; bake another 5 minutes to brown the rolls. Garnish with parsley, if desired.

While the rolls are baking, prepare the au jus with water according to the package directions.

Serve with au jus on the side for dipping.
