Sloppy Joe Mac and Cheese

Ingredients

1 T. salt
16 oz. elbow macaroni pasta
1 lb. ground beef
1 t. salt
1/2 t. freshly ground black pepper
3 cloves garlic, minced
1 small yellow onion, diced
1 1/2 T. brown sugar
30 oz. canned crushed tomatoes
1 T. Worcestershire sauce
1/2 T. chili powder
1/4 c. freshly chopped parsley, divided
2 c. shredded Mozzarella or Cheddar cheese

Bring a large pot of water with 1 T. salt to a boil. Cook macaroni to al dente according to the package directions.

Meanwhile, heat a large skillet over medium-high heat; add ground beef and onion, browning while breaking meat up into small pieces as it cooks. Discard excess grease. Season with 1 t. salt and 1/2 t. black pepper. Add garlic; cook for about 1 minute.

Stir in brown sugar, tomatoes, Worcestershire sauce, chili powder and half of the parsley. Reduce heat; simmer for 10 – 12 minutes.

Drain cooked pasta; transfer to the skillet, stirring to coat the pasta with the sauce. Add half of the cheese; toss to coat. Top with the remaining cheese and parsley. Cover the skillet to melt the cheese.

Serve immediately.

8 servings.

*Store any leftovers in the refrigerator in an airtight container for up to 3 days.
