Grilled Peanut Butter and Jelly Sandwich

You don't have to be a kid to enjoy this simple to make sandwich. You'll wonder why you never thought of making it sooner.
Ingredients
2 slices good quality bread
2 T. peanut butter
2 T. jam or jelly
2 T. softened butter, divided

Spread peanut butter on one slice of bread and the jam/jelly on the other.
Place the two together to make a sandwich; spread the butter on the outside of both slices all the way to the edges.
Place a non-stick skillet over medium heat. When hot, lay the sandwich in the center; cook for 2-3 minutes per side or until lightly browned.
Serve while hot.
Makes 1 sandwich.
*Variations: Add bananas, cheese slices or several slices of cooked bacon. They could also be made in a panini machine.
