If you are needing a special lunch sandwich, this one is definitely it. Everyone will ask for your recipe that you may just want to keep to yourself.
Homemade Whole-grain Mustard:
2 T. yellow mustard seeds
2 T. brown mustard seeds
1/4 c. apple cider vinegar
2 T. water
1 small pinch of salt
2 T. honey
Sandwiches:
4 large croissants, sliced into halves, horizontally
4-8 T. fig butter (or fig jam)
8-14 slices Black Forest Smoked ham or any good quality deli ham
6 oz. wedge Grand Cru gruyere cheese, thinly sliced (or your favorite substitute)
several T. homemade whole-grain mustard
micro-greens, or favorite leafy greens
1 T. Everything Bagel Seasoning
2 T. honey
Make mustard at least 8 hours in advance:
Place brown and yellow mustard seeds in a spice grinder (or use a mortar and pestle); pulse a few times until mostly ground. Transfer to a small jar; add the vinegar, water, salt and honey. Cover; shake to combine. Let sit, sealed on the counter for 8 hours; refrigerate to mellow and thicken.
When ready to make the sandwiches, preheat oven to 375 degrees.
Spread fig butter on the bottom inside of croissant halves. Place a few ham slices over the fig butter; add a few cheese slices; add greens. Spread the mustard on the insides of the top halves of the croissants. Place the tops on the sandwiches; brush on the warmed honey. Sprinkle the Everything Bagel Seasoning on the tops.
Place the sandwiches on a rimmed baking sheet that has been lined with parchment paper.
Bake 6-8 minutes, until the cheese starts to melt.
Serve immediately.
