Baked Cajun Salmon Fillet

Ingredients
1 lb. salmon fillet, boneless, skin on
2 T. extra virgin olive oil, divided
1/4 - 1/2 t. salt
Seasoning Blend:
1 t. Cajun or Creole seasoning
1 t. garlic powder
1 t. onion powder
1 t. smoky paprika
black pepper, to taste
1/4 lemon, zested and juiced
finely chopped Italian parsley, for garnish

Preheat oven to 425 degrees.
Rinse salmon; pat dry.
Mix seasoning blend ingredients together in a small bowl.
Add 1 T. olive oil to an oven-safe skillet; place fillet in the skillet skin side down. Add remaining olive oil over the top of the salmon. Season with salt; rub seasoning blend into the salmon. Top with lemon juice and zest.
Bake 20-25 minutes.
Remove from oven.
Serve salmon garnished with parsley and more lemon zest, if desired.
