These crepes are delicious and easy to make. They are absolute perfection.
Crepes:
1 c. all-purpose flour
1 1/2 c. milk
2 large eggs
1 t. oil
non-stick cooking spray
Berries:
6 oz. blackberries
6 oz. raspberries
12 oz. strawberries, cut into quarters
12 T. whipped cream
1 t. powdered sugar, for serving
Blend flour, milk, eggs and oil in a blender until smooth.
Heat a non-stick crepe pan on medium-low heat. When hot, spray with the cooking spray, coating the bottom of the pan.
Pour 1/4 c. of the crepe mixture into the pan, swirling pan slightly to make crepe thin and smooth. Cook 1 minute or until bottom of crepe is a light, golden brown; flip. Cook 30 seconds to 1 minute or until a light, golden brown.
Transfer to a platter. Repeat with remaining crepe mixture.
Add 1 T. whipped cream and some berries to the center of each crepe; roll crepes.
Serve warm with powdered sugar lightly sprinkled on top with more berries.
6 servings- 2 per serving for a total of 12.
