This one dish meal has just a few ingredients and is quick and simple to prepare. It's a delicious, flavorful meal for any day but especially busy week nights.
1 T. butter
1 lb. boneless, skinless chicken breasts
2 c. Minute rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 can water
1 envelope Lipton onion soup mix
Preheat oven to 350 degrees. Grease a 9 x 13 inch casserole dish with the butter.
In a medium bowl, stir together both of the cream of soups, rice and 1 can of water. Stir; pour into the prepared casserole dish. Place the chicken over the rice mixture.
Sprinkle the onion soup mix evenly over the chicken. Cover with aluminum foil.
Bake 45-50 minutes, or until the chicken is cooked through.
