Whether you serve these delicious chicken strips as an appetizer or for dinner, they will be a hit with both kids and adults alike. They're tender and juicy on the inside and crispy on the outside.
1 lb. chicken breasts (or thighs), cut into strips (or 1 lb. bag of chicken tenders)
non-stick cooking spray/oil
1/2 c. plain flour
1/2 t. salt
1/4 t. pepper
2 eggs
6 oz. favorite flavor of Doritos, crushed
ranch or blue cheese dressing, for dipping, if desired
Preheat oven to 350°F.
In a bowl, combine flour, salt and pepper. Line a baking pan or tray with aluminum foil.
In another bowl, add the eggs; lightly beat.
In a third bowl, add crushed Doritos.
Lightly spray the chicken with oil.* Dip chicken in the flour, then the egg mixture, and lastly the Doritos.**
Place coated chicken on the prepared pan/tray.
Bake 15 minutes. The internal temperature of the chicken should be above 165°F.
Serve with ranch or blue cheese dressing for dipping.

*Lightly spraying the chicken with oil will help crisp the crumb and keep the chicken moist.
**For a thicker crust, double coat the chicken. Be careful when cooking the chicken as it will take longer, and the crust may start to burn before the chicken is fully cooked.
