Description
This chili that's made with Irish beer provides a nice undertone without being overpowering. It adds a rich flavor to the chili but you won't taste beer when it's done.
Ingredients
- 1 T. olive oil
- 1 lb. lean ground beef
- 1 t. salt
- 1/2 t. black pepper
- 1 c. chopped celery
- 1 c. chopped onion
- 2 bell peppers, chopped (any color)
- 2 t. garlic powder
- 1/2 t. ground cinnamon
- 1/2 t. dried oregano
- 3 T. chili powder
- 1/4 t. cayenne pepper
- 2 t. ground cumin
- 14 oz. can pinto beans, drained
- 14 oz. can black beans, drained
- 28 oz. can crushed tomatoes
- 16 oz. dark Irish beer like Guinness, a neutral lager, or beef stock
- shredded cheese, chopped green onions, sour cream for serving, if desired
Steps
- Heat olive oil in skillet over medium heat; add ground beef, salt and pepper; brown the meat, breaking up pieces.
- Place a slow cooker liner in a large slow cooker for easy clean up. Transfer meat with the pan drippings to the slow cooker; add remaining ingredients; stir. Cook on Low for 6-8 hours.
- Serve garnished with sour cream, shredded cheese or green onions, if desired.
