This chili that's made with Irish beer provides a nice undertone without being overpowering. It adds a rich flavor to the chili but you won't taste beer when it's done.
1 T. olive oil
1 lb. lean ground beef
1 t. salt
1/2 t. black pepper
1 c. chopped celery
1 c. chopped onion
2 bell peppers, chopped (any color)
2 t. garlic powder
1/2 t. ground cinnamon
1/2 t. dried oregano
3 T. chili powder
1/4 t. cayenne pepper
2 t. ground cumin
14 oz. can pinto beans, drained
14 oz. can black beans, drained
28 oz. can crushed tomatoes
16 oz. dark Irish beer like Guinness, a neutral lager, or beef stock
shredded cheese, chopped green onions, sour cream for serving, if desired
Heat olive oil in skillet over medium heat; add ground beef, salt and pepper; brown the meat, breaking up pieces.
Place a slow cooker liner in a large slow cooker for easy clean up. Transfer meat with the pan drippings to the slow cooker; add remaining ingredients; stir. Cook on Low for 6-8 hours.
Serve garnished with sour cream, shredded cheese or green onions, if desired.
