Love quiche but aren't a fan of the crust? Try making a frittata instead. You can add some of your favorite ingredients as desired. Serve it for breakfast/brunch or for dinner with a side salad.
2 T. olive oil
6 oz. baby spinach
1 c. grape tomatoes, sliced in halves, divided
8 large eggs
1/2 c. shredded Cheddar cheese
salt and pepper, to taste
1/4 c. milk
Heat a cast iron or oven-safe skillet over medium-high heat; add olive oil; saute spinach just until wilted; add half of the tomatoes. Pour eggs slowly into pan.
Sprinkle cheese over eggs; spread remaining tomatoes evenly over the egg mixture. Season with salt and pepper.
Place skillet in oven. Bake 20-30 minutes or until eggs are cooked through and golden brown.
Remove from oven; let rest several minutes. Cut into wedges.
Serve warm.
