A frittata is basically an Italian egg pizza made from whatever you may have on hand. Make it vegetarian or with your favorite meat/protein.
8 eggs
½ c. water
favorite fresh or dried herbs, to taste
1/8 t. salt
1/8 t. black pepper
Filling:
2 c. chopped vegetables, meat, poultry, or seafood, or a combination, cooked or sauteed
1/2 c. favorite shredded cheese
Preheat oven to broil.
Whisk eggs, water, herbs, salt and pepper in medium bowl; set aside.
Lightly spray a 10 inch non-stick, ovenproof or cast iron skillet with cooking spray; heat skillet over medium heat. Add filling ingredients; sauté, stirring frequently.
Pour in egg mixture. As eggs set around the skillet edge, gently lift cooked portions with a spatula to allow uncooked egg to seep underneath. Cook until bottom is set and top is almost set, about 8 - 10 minutes.
Sprinkle shredded cheese on top.
Place skillet under hot broiler for 2 - 3 minutes to melt cheese and puff up the frittata or cover with lid and cook for several minutes on the stovetop.
Loosen the edge of the frittata. Cut into wedges.
Serve.
