In about 30 minutes, you can have a yummy homemade soup on the table that's satisfying and delicious. It's full of hearty ingredients like ham, potatoes and carrots.
2 T. olive oil
1 medium onion, chopped
2 celery stalks, chopped
1 carrot, sliced in thin rounds
3 c. unpeeled red potatoes, chopped in large bite sized pieces
1/2 lb. sweet deli ham, cut into strips or any kind of good quality smoked ham
2 garlic cloves, minced
1/2 t. onion powder
2 t. dried parsley
3 c. low-sodium chicken stock/broth
3 T. butter
3 T. flour
1 c. milk
salt and pepper
In a large stockpot or Dutch oven, heat olive oil over medium heat. Add onion, celery, carrot, potatoes and ham; cook until onions and ham start to crisp on the edges, about 5-7 minutes. Add the garlic, onion powder and parsley; cook 1 minute. Stir in chicken stock/broth. Simmer until potatoes are tender, about 15 minutes.
In a skillet, melt butter; whisk in flour over low heat for 3-4 minutes. Slowly whisk in milk, working to make it creamy and removing lumps. When thoroughly mixed and thickened, slowly whisk/stir into soup. Simmer until warmed.
Serve, seasoned with salt and pepper, to taste.
*This is a chunky soup. If you want it a little thinner, add more chicken stock/broth.
