Ingredients
- 1 lb. boneless, skinless chicken breasts, cut into 1 in. strips
- 1 large yellow onion, cut into strips
- 3 medium bell peppers, 1 green, 1 red, and 1 yellow or orange, each sliced into strips
- 2–3 T. olive oil
- 1 oz. packet fajita seasoning mix
- tortillas, warmed according to package directions
- Topping Choices:
- sour cream or plain Greek yogurt, diced tomatoes, diced avocado, salsa, shredded Mexican cheese, chopped cilantro, freshly squeezed lime juice
Steps
- Preheat oven to 400 degrees F.
- Place chicken strips, sliced onion and bell peppers on a sheet pan. Drizzle with olive oil; toss everything to coat with oil. Sprinkle fajita seasoning mix over everything; toss until seasoning is evenly distributed evenly.
- Bake 20-25 minutes, or until chicken has reached an internal temperature of 165 degrees F.
