Although quiche is typically a breakfast dish, it can be enjoyed for any meal.Use leftover ham or buy it from the deli, add a few more ingredients and bake it with a store bought pie crust. What could be easier?
1 store bought pie crust, softened as directed on box
1 c. diced cooked ham (leftover or deli ham)
1 c. shredded Cheddar cheese (4 oz.)
4 eggs
1 c. half-and-half
1 1/2 t. chopped fresh thyme leaves (dried is not recommended)
1/4 t. salt
1/8 t. black pepper
Preheat oven to 375 degrees F.
Place pie crust in a 9 inch glass pie plate as directed on box for a one crust filled pie. DO NOT prick crust. Bake 10 minutes. (Pre-baking the crust produces a browner, sturdier bottom to support the filling.) If necessary, use the flat bottom of metal measuring cup to carefully press down on baked pie crust to flatten. Cool 10 minutes.
Layer ham and 1/2 c. cheese in the bottom of the pie plate.
In a medium bowl, beat eggs and half-and-half with a whisk. Stir in 1 t. thyme, the salt and pepper; pour mixture over the ham and cheese. Sprinkle with remaining 1/2 c. cheese.
Bake 30 - 35 minutes or until a knife inserted in the center comes out clean.
Cover the edge of the crust with foil after 15 - 20 minutes of baking to prevent excess browning.
Let stand 15 minutes before serving.
Serve, garnished with remaining 1/2 t. fresh thyme or freshly chopped green onions.
