This dish just might be your new family favorite. It's made with rotisserie chicken, rice, celery and lots of other wonderful ingredients.
1 1/2 c. diced cooked rotisserie chicken
1 1/2 c. cooked rice
1 c. chopped celery
1/2 c. chopped walnuts or pecans
10 3/4 oz. can cream of chicken soup
2 t. finely chopped onion
1/2 t. salt
1/4 t. black pepper
1/8 t. ground red pepper
1 T. lemon juice
3/4 c. mayonnaise
1/4 c. water
3 hard-cooked eggs, sliced
2 c. coarsely crumbled potato chips
Preheat oven to 400 degrees F. Grease a 1 x 11 inch casserole dish.
Chicken Mixture: Combine first 10 ingredients in a large bowl.
Mayonnaise Mixture: In another large bowl, combine mayonnaise and water; whisk until smooth.
Add mayonnaise mixture to chicken mixture; gently fold in egg slices.
Spoon mixture into the prepared casserole dish; top with potato chips.
Bake, uncovered, 15 minutes or until casserole is thoroughly heated and bubbly.
