Baked Caesar Chicken

Description

This easy to make chicken is flavorful and is made with just a few simple ingredients. It can be ready to eat in about 30 minutes.

Ingredients

4 boneless, skinless chicken breasts (about 2 lb.)
1 c. creamy Caesar dressing
2 oz. Parmesan cheese, finely grated (about 1/2 c.)
2 T. coarsely chopped fresh parsley

Arrange a rack in the middle of the oven. Preheat the oven to 400 degrees F.

Place a chicken breast in a gallon-sized zip-top bag. Pound with a rolling pin or the flat side of a meat mallet to an even 1/2 inch thickness. Set aside. Repeat with the remaining chicken breasts.

Pour the dressing in a baking dish large enough to fit the chicken breasts in a single layer. Place chicken in the dish, then turn them over, coating them with dressing.

Bake until chicken is golden-brown, cooked through, and registers 165 degrees F on an instant-read thermometer, 20 - 25 minutes.

Meanwhile, finely grate 2 oz. Parmesan cheese to make about 1/2 cup. Coarsely chop fresh parsley to get 2 tablespoons.

Heat the broiler to high. Remove the baking dish from the oven.

Sprinkle the Parmesan cheese over the chicken in an even layer.

Broil chicken until cheese is melted and lightly browned, 3 - 4 minutes.

Serve the chicken garnished with the parsley, if using.

4 servings.
