Make holidays special with this spiral ham made with both fresh and canned pineapple and brown sugar. It's a classic dish that everyone will enjoy.
Pineapple Ham Glaze:
1 c. fresh pineapple, finely chopped
1 c, pineapple juice
½ t. cinnamon
4-5 cloves
½ c. brown sugar, packed
1 T. butter
Ham:
9 lb. spiral cut ham
1 can pineapple rings in 100% juice (NOT fresh)
pineapple ham glaze
2 c. pineapple juice
Pineapple Glaze:
Finely chop fresh pineapple; add to a small pot over medium heat with 1 c. pineapple juice; stir well.
Add brown sugar, cinnamon, and cloves; stir to combine; allow it to reach a light boil.
Turn heat down until simmering; let cook 10 minutes until thickened.
Roasting Ham:
Preheat the oven to 325 degrees F.
While glaze cools, place pineapple rings on the bottom of a roasting pan. Place a roasting rack over the pineapple rings, on top of the pan. Place ham on top of the rack.
Score ham with 1/4 inch deep cuts along the top to help ham soak up the glaze. Brush ham generously with pineapple glaze, including between the slices.
Cover the ham completely with pineapple rings, using wooden toothpicks to keep rings in place.
Pour remaining pineapple juice into the bottom of the pan along with the pineapple rings. (DO NOT pour it over the ham). Cover with aluminum foil.
Bake 15-18 minutes per pound of ham. (about 135-162 minutes)
Remove pan from the oven; remove the aluminum foil and toothpicks. Set the pineapple rings aside.
Allow ham to rest for 15 minutes. Glaze ham again. Slice.
