Description
Store bought cheese ravioli is a life saver for busy families. Serve it in a brown butter sauce with shallots and baby spinach then serve it topped with pistachios and you have an amazing meal.
Ingredients
- 3 T. butter
- 2 medium shallots, chopped
- 1 t. fresh thyme, chopped
- 5 oz. baby spinach
- 2 t. sherry vinegar
- 1/4 t. Kosher salt
- 1/4 t. freshly ground black pepper
- 1 lb. cheese ravioli, cooked
- 1/2 c. pasta cooking water, reserved
- 1/4 c. pistachios, shelled and chopped, for garnish
Steps
- Cook cheese ravioli according to package directions in well salted boiling water, 3-4 minutes; drain, reserving 1/2 c. cooking water.
- While pasta is cooking, heat a 12 inch skillet on medium heat; add butter, shallots, and thyme; cook 8 minutes, stirring occasionally.
- Add spinach; cook just until wilted; remove from heat. Stir in sherry vinegar, salt, and black pepper.
