Stuck for a new dinner or lunch idea that's quick and easy? Try this chicken and rice bowl. You'll be glad that you did.
1 c. instant rice, uncooked
1 c. chicken broth
1/2 c. chopped frozen green pepper, thawed
1/4 c. chopped onion
2 t. olive oil
9 oz. package ready-to-use grilled chicken breast strips (found in freezer section of grocery store) or make your own
1/2 c. frozen corn, thawed
1/2 c. frozen peas, thawed (or peas and carrots)
1 t. dried basil
1 t. rubbed sage
1/8 t. salt
1/8 t. black pepper
Cook rice in chicken broth according to package directions.
While rice is cooking, saute green pepper and onion in a large skillet in olive oil for 2-3 minutes or until crisp-tender. Stir in chicken, corn, peas, basil and sage. Cook, uncovered, 4-5 minutes over medium heat or until heated through. Stir in the rice, salt and pepper.
4 servings.
*Fresh vegetables like broccoli, bell peppers or avocado would be good to use, if you wish.
