If you're looking for an easy casserole to make for dinner, look no further. This one's for you. Not only is it easy and quick to make, it's also delicious.
6 boneless, skinless chicken breasts, diced
1 c. mayonnaise or Greek yogurt
1 c. shredded Parmesan cheese, divided
1 t. seasoning salt
1/2 t. ground black pepper
1 t. garlic powder
cooked pasta or rice, for serving if desired
Preheat oven to 375 degrees F. Grease a 9x13 inch casserole dish or baking pan.
In a small bowl, combine mayonnaise, 3/4 c. Parmesan cheese, seasoning salt, black pepper, and garlic powder; set aside.
Place diced chicken in the prepared baking dish. Evenly spread mayonnaise mixture on top of the chicken. Sprinkle the remaining Parmesan cheese on top of mayonnaise mixture.
Bake for 30-35 minutes. Remove from oven.
Serve over pasta, rice, or alone.
6 servings.
Tip: Chicken might be a bit "soupy" from the liquid being released as it cooked.
