Although this is typically an appetizer, it can be served as a side dish or even a main dish. You can't go wrong with tots, cheese, bacon and veggies.
2 lb. frozen tater tots
6 slices thick cut bacon, cooked and chopped
1 c. shredded sharp Cheddar cheese
1 green onion, chopped
1 small tomato, diced
1 small red onion, diced
1 small bell pepper, any color, diced
sour cream, for serving
Preheat oven to 450 degrees F.
Place tots in a cast iron skillet or oven safe pan. Bake for 7-8 minutes; flip tots over; bake for another 7-8 minutes.
While tots are baking, prepare the bacon. Start with a cold skillet, turn stovetop to medium heat; fry bacon until crispy but not burned. Transfer bacon to a paper towel lined plate to absorb the excess bacon grease.
Chop bacon; set aside.
Wash, dry and dice tomato, onion, and bell pepper. Wash and chop green onion. Set aside.
When the tater tots are finished baking, sprinkle on the shredded cheese. Place them back in the oven for 2 minutes. Remove the skillet from the oven.
Serve topped with sour cream and remaining ingredients.
