If you have 25 minutes to prepare a main dish for dinner, then you can make this dish. It's a delicious, citrusy, sweet chicken that's juicy and tender.
1 lb. chicken thighs, deboned, skin-on
3 cloves garlic, minced
2 T. honey
1 1/2 T. soy sauce
2 T. freshly squeezed lime juice
3 dashes cayenne pepper
big pinch salt
chopped parsley, for garnish
lime wedges, for serving
Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.
Rub minced garlic on the chicken thighs.
In a bowl, combine honey, soy sauce, lime juice, cayenne pepper and salt; stir; add to the chicken. (Double the marinade if wanting it to be saucier).
Transfer chicken to the prepared baking sheet. Cover chicken loosely with aluminum foil to prevent burning.
Bake 20 minutes, or until cooked through. If the sauce pools at the bottom of the foil, spoon and/or brush the sauce over the chicken.
Remove foil. Broil chicken for 1 minute or until the skin is charred. Remove from oven. Slice.
Serve slices garnished with parsley and lime wedges squeezed over the chicken.
