These salmon patties can be made with canned or fresh salmon, mixed with fresh veggies and seasonings, and baked and served with tartar sauce and lemon wedges.
1 lb. salmon cooked and flaked*
2 T. olive oil
2 large eggs, beaten
1/4 c. mayonnaise or plain Greek yogurt
3/4 c. Panko bread crumbs
1 1/2 c. finely diced bell peppers, any color or combination
1/4 c. finely diced red onion
3 T. finely chopped fresh dill
2 t. Old Bay seasoning
1 dash Tabasco or favorite hot sauce, if desired
tartar sauce, for serving
lemon wedges, for serving
Preheat oven to 425 degrees F. Grease a baking sheet with oil.
In a large bowl, break salmon into bite size pieces or flake drained and canned salmon.* Add remaining ingredients; gently mix; form into 6 patties.
Place patties on an prepared baking sheet; bake 15 minutes; turn over; bake 5 more minutes until golden brown on each side.
Serve immediately with lemon slices and tartar sauce.
