This casserole will have you drooling while you are making it. It's loaded with chicken, potatoes, BBQ sauce, cheese and bacon. What more could you want?
1 lb. boneless, chicken breasts, cubed
8 red potatoes, cubed
1/4 c. olive oil
1 t. kosher salt
1/2 t. black pepper
1 c. BBQ sauce
2 c. Cheddar cheese, freshly shredded
1 lb. bacon, chopped
green onions, diced for topping
Ranch dressing or sour cream
Preheat oven to 400 degrees F. Spray a 9 × 13 baking dish with non-stick cooking spray.
Combine potatoes, chicken, olive oil, salt and pepper in a large bowl; toss to coat. Add BBQ sauce; toss to coat. Transfer mixture to the prepared baking dish.
Bake, uncovered for 20 minutes.
Meanwhile, fry bacon until crisp; transfer to a paper towel lined plate. When cooled a bit, chop into bite-sized pieces.
Remove dish from oven; stir; bake another 20 minutes.
Shred Cheddar cheese; chop green onions; set aside.
Remove dish from oven; stir; bake for another 20 minutes.
Remove from oven if the potatoes are browned. If they aren’t, put back into the oven for another 10 minutes.
Top chicken and potatoes with bacon and cheese; return to the oven for 5 minutes, or until cheese is completely melted.
Serve, topped with green onions and drizzled with Ranch dressing or sour cream.
