With just 4 ingredients and your slow cooker, you can make an easy, tender, and tasty dinner.
1 large can pineapple chunks in 100% juice, drained and juices reserved
1/2 c. brown sugar
1/3 c. low-sodium soy sauce
2 lb. chicken tenderloins, cut into chunks
In a bowl, stir together reserved juice, brown sugar and soy sauce. Set aside the pineapple chunks for later.
Place chicken tenderloin chunks in the slow cooker; pour the sauce mixture over the chicken. Cover; cook 6-8 hours on Low depending on your slow cooker.
When there is 1 hour of cooking time remaining, place the pineapple chunks on top of the chicken. Cook another hour.
Serve with white rice, if desired.
