This casserole tastes like a million bucks. It's a fantastic and economical meal to serve family and friends. It can be easily changed to your needs and likes.
16 oz. pkg. spaghetti pasta
1 large yellow onion, chopped
4-6 cloves garlic, minced
1 1/2 lb. sweet Italian sausage, casings removed
3 t. dried Italian seasoning, divided
48 oz. spaghetti sauce, divided
8 oz. ricotta or cottage cheese
8 oz. cream cheese, at room temperature
1/4 c. sour cream
3 c. shredded Mozzarella cheese, divided
1/3 to 1/2 c. butter, cut into slices, divided
Preheat oven to 350 degrees F.
Bring a large pot of well salted water to a boil. Cook pasta according to package directions; drain.
Return pasta to pot; pour in 24 oz. spaghetti sauce; stir; set aside.
In a large skillet, heat 2 T. olive oil over medium heat; add onion and garlic; cook until they begin to soften, about 5 minutes. Add Italian sausage and 2 t. Italian seasoning; cook until no pink remains; discard excess grease. Add remaining spaghetti sauce to skillet; stir; set aside.
In a medium bowl, combine ricotta or cottage cheese, cream cheese, sour cream, 1 c. Mozzarella cheese, and 1 t. Italian seasoning; set aside.
Place half of the butter slices in a 9 x 13 inch baking dish. Spread half the spaghetti in dish; spread cheese mixture evenly over spaghetti. Spread remaining spaghetti over the cheese mixture. Top with the remaining butter slices. Pour meat sauce evenly over top layer of spaghetti. Top with remaining Mozzarella cheese.
Bake about 35-45 minutes or until casserole is heated through.
