Description
It's not necessary to buy a fast food burger and throw away the bun to enjoy a Big Mac and be keto-friendly. Make it yourself and get the same deliciousness in less than 30 minutes.
Ingredients
- 1 large yellow onion, peeled, divided
- 1 T. olive oil
- 1 lb. lean (93/7) ground beef
- 3/4 t. salt and 1/4 t. black pepper
- 1 t. garlic powder
- 1/2 t. beef bouillon powder, optional
- 1 T. Worcestershire sauce
- 16 oz. shredded iceberg lettuce
- Toppings: grated or shredded cheese, diced dill pickles, halved cherry tomatoes, thinly sliced red onions, white sesame seeds
- Sauce:
- 1/2 c. full-fat mayonnaise
- 2 T. ketchup
- 1 T. sweet pickle relish
- 1 t. adobo sauce from canned chipotle chiles in adobo
- 1 T. grated onion
Steps
- Peel the onion. Use the large holes of a cheese grater to grate the onion to get 1 T. of grated onion; set aside for the sauce. Finely dice the remaining onion to get 1 c.; set aside.
- Sauce: Prepare first so flavors have a chance to meld. Combine all the sauce ingredients: the mayo, ketchup, pickle relish, adobo sauce, and the 1 T. grated onion. Season to taste with about 1/4 t. salt; stir. Season to taste. Refrigerate until ready to serve.
- Ground Beef: Heat a large cast-iron skillet to medium-high heat; add olive oil and the 1 c. diced onion; sauté until it begins to turn golden, about 4-5 minutes. Move the onion to the edges of the skillet; add ground beef to the middle. Brown the ground beef for about 1 minute per side before crumbling and browning all the way through.
