Big Mac In A Bowl

Description

It's not necessary to buy a fast food burger and throw away the bun to enjoy a Big Mac and be keto-friendly. Make it yourself and get the same deliciousness in less than 30 minutes.

Ingredients

1 large yellow onion, peeled, divided
1 T. olive oil
1 lb. lean (93/7) ground beef
3/4 t. salt and 1/4 t. black pepper
1 t. garlic powder
1/2 t. beef bouillon powder, optional
1 T. Worcestershire sauce
16 oz. shredded iceberg lettuce

Toppings: grated or shredded cheese, diced dill pickles, halved cherry tomatoes, thinly sliced red onions, white sesame seeds

Sauce:
1/2 c. full-fat mayonnaise
2 T. ketchup
1 T. sweet pickle relish
1 t. adobo sauce from canned chipotle chiles in adobo
1 T. grated onion

Peel the onion. Use the large holes of a cheese grater to grate the onion to get 1 T. of grated onion; set aside for the sauce. Finely dice the remaining onion to get 1 c.; set aside.

Sauce: Prepare first so flavors have a chance to meld. Combine all the sauce ingredients: the mayo, ketchup, pickle relish, adobo sauce, and the 1 T. grated onion. Season to taste with about 1/4 t. salt; stir. Season to taste. Refrigerate until ready to serve.

Ground Beef: Heat a large cast-iron skillet to medium-high heat; add olive oil and the 1 c. diced onion; sauté until it begins to turn golden, about 4-5 minutes. Move the onion to the edges of the skillet; add ground beef to the middle. Brown the ground beef for about 1 minute per side before crumbling and browning all the way through.

While beef is cooking, add salt and pepper, garlic powder, and beef bouillon powder. When fully cooked, discard excess grease; stir in Worcestershire sauce. Remove from heat.

Assembly: Divide shredded lettuce evenly among 4 bowls. Evenly divide the ground beef on the lettuce. Add desired toppings like cheese, pickles, cherry tomatoes, and red onions.

Drizzle sauce over bowls. Finish off with a light sprinkling of sesame seeds.
