This dish is so simple to make, it's impossible to mess it up. It has everything a meal needs, a protein, a vegetable and a carb. Plus, clean up is a snap!
Honey Sauce:
3 T. butter
1/2 c. honey
2 t. minced garlic
1/4 t. salt
1/8 t. black pepper
4 boneless, skinless chicken breasts
2 lb. baby gold potatoes, quartered or cut into 1 inch pieces
1 lb. fresh green beans
3 T. oil
1 t. salt, or to taste
1/2 t. black pepper, or to taste
1 t. Italian blend seasoning
1 t. garlic powder
1/4 t. smoked paprika
1 T. freshly grated Parmesan cheese
Preheat oven to 400 degrees F.
Honey Sauce: In a medium sauce pan, melt butter; stir in honey, garlic, salt and pepper; bring to a boil; reduce to a simmer. Remove from heat. Set aside.
Pound chicken breasts to an even thickness.
Arrange green beans, chicken breasts, and potatoes on a large sheet pan. Drizzle on oil; season with salt and pepper, to taste.
In a small bowl, stir together Italian seasoning, garlic powder, and smoked paprika; sprinkle over vegetables and chicken. Pour honey sauce over chicken.
Bake 20-25 minutes until vegetables are tender and chicken is cooked through.
Serve with Parmesan cheese sprinkled over the green beans and potatoes.
