Grilled Hawaiian Cheeseburgers

Description

Change up your grilled beef cheeseburgers with a tasty ginger sesame teriyaki sauce, slices of grilled pineapple, lettuce and cheese on brioche buns. Serve with your favorite sides.

Ingredients

Ginger Sesame Teriyaki Sauce:
1 c. water
1/4 c. soy sauce
1/4 c. light brown sugar, packed
2 T. honey
2 T. sesame seeds, toasted
1 t. fresh ginger, grated
1/2 t. garlic powder
2 T. cornstarch (mixed with 1/4 c. cold water)

Hawaiian Cheeseburgers:
1 lb. 5/15 ground beef or 80/20 ground chuck
1/2 t. sesame seed oil
1/2 t. salt, or to taste
1/4 t. black pepper
1/2 t. paprika
4 brioche or hamburger buns, toasted or grilled
8 rings pineapple, grilled (2 per burger, fresh or canned)
4 slices Provolone or Cheddar cheese
8 large leaves green leaf lettuce, rinsed and patted dry

Ginger Sesame Teriyaki Sauce:
In a medium saucepan, combine water, soy sauce, light brown sugar, honey, toasted sesame seeds, ginger, and garlic powder. Heat to medium-high; combine cornstarch with cold water and add to the sauce. Cook on medium-high until a slow boil is reached, reducing heat, if necessary. Cook until the sauce thickens, adding more water to thin the sauce, only if it thickens too quickly. Remove from heat; allow to cool to room temperature, about 15 minutes.

Cheeseburgers:
Add sesame seed oil to ground beef; divide equally into 4 patties, about three fourths of an inch thick; set aside.

Toast or grill brioche or hamburger buns until golden brown, if desired. Grill pineapple, just enough to heat the pineapple and leave grill marks.

Heat a grill or a large skillet to medium-high heat. Season the 4 patties with salt, pepper, and paprika. Place the seasoned sides facing down on the heated grill or skillet. They should sizzle on contact. Repeat seasoning on the top sides of the patties.

Cook hamburgers for 3-4 minutes; flip when bottoms have a nicely browned color. Cook the second side for 4-5 minutes; add the cheese slices in the last minute of cooking.* Close the grill or cover the skillet with a lid if the cheese isn't melting.

While the burgers are cooking, place green leaf lettuce on the bottom halves of the buns. Place cooked burgers on the buns with the lettuce, top with 2 grilled pineapple slices each, then drizzle with some ginger sesame teriyaki sauce. Add the bun tops.

Serve.

*Tip: Cooking times are based on cooking 1/4 lb. ground beef burgers over direct heat, on the grill or stove top:
6-7 minutes for medium-rare -red in the middle
7-8 minutes for medium -pink in the middle
9 minutes for medium-well -only a hint of pink in the middle
10 minutes for well done -no pink in the middle
