Make these sliders for your next get together and get rave reviews. They are much like a buffalo chicken dip but in a dollar roll with melted cheese, buffalo sauce and slaw, if you choose to.
1 rotisserie chicken, shredded (3-4 c. shredded chicken)
1/2 c. buffalo wing sauce
1/2 c. Ranch dressing
1 t. Cajun seasoning
1/4 t. salt
1/8 - 1/4 t. black pepper
2 (12 count) packages King's Hawaiian rolls
8 oz. freshly shredded Monterey Jack cheese
Topping:
3 T. unsalted butter, melted
1/2 t. Italian seasoning
Preheat oven to 350 degrees F. Spray a large rimmed baking sheet with non-stick cooking spray; set aside.
Place shredded chicken in a bowl; add buffalo sauce, Ranch dressing, Cajun seasoning, salt and pepper; stir to combine.
DON'T pull the rolls apart, just use a large serrated knife to slice the rolls in half across horizontally, like slicing a bagel, separating the tops from the bottoms. Place the layer of bottoms into the prepared baking sheet, cut sides up.
Sprinkle half of the cheese evenly across the rolls; top with the chicken mixture and then the remaining cheese. Place on the top layer of rolls.
In a small bowl, stir together the melted butter and Italian seasoning; brush over the tops of the sliders.
Bake 10-15 minutes or until cheese has melted and the tops are slightly browned.
Makes 24 sliders.
