Grilled Mac and Cheese Sandwiches

Description

Make sandwiches with two of everyone's favorite dishes, grilled cheese and mac and cheese. Using leftover mac and cheese, your favorite dense bread and cheese slices, you'll make an awesome, quick and delicious lunch.

Ingredients

4 slices sourdough bread, country white bread, or other dense bread
8 slices Cheddar or American cheese
2 T. butter
1 1/2 c. leftover macaroni and cheese, divided

For each sandwich, over medium heat, warm 3/4 c. leftover mac and cheese on a small non-stick skillet. Once warmed in about 3-4 minutes, shape mac and cheese into 2 squares about the size of the bread. Top each with 2 cheese slices. Turn off heat.

Butter 2 bread slices; place both slices buttered side down in a second skillet over medium heat.

Top one of the bread slices with 2 cheese slices. When lightly browned turn off heat. Transfer mac and cheese rectangle onto cheese covered bread in the skillet using a spatula.

Cover with the other bread slice, toasted side up. Gently press together with spatula and transfer to a plate.

Serve immediately.

2 servings.

*Tip: Add cooked bacon slices, if desired.
