This delicious salad has all of the flavors of an Italian sub sandwich but replaces the bread with pasta. It's a hearty salad that can be served as a main dish.
Dressing:
1/4 c. olive oil
1/4 c. balsamic vinegar
2 garlic cloves, minced
1 t. Dijon mustard
1/4 t. kosher salt
1/8 t. black pepper
Salad:
2 c. uncooked spiral pasta (rotini)
1 c. any color bell pepper, diced
3/4 c. sliced pepperoncini, drained
1/2 red onion, sliced
4 oz. cubed Provolone cheese
2 oz. thinly sliced deli ham
2 oz. thinly sliced hard salami
5 c. lettuce, chopped
3/4 c. cherry or grape tomatoes, quartered
In a small bowl, whisk together the dressing ingredients; set aside.
Cook pasta in well salted water according to package directions; drain; cool; set aside.
In a large bowl, combine bell pepper, pepperoncini, red onion, cheese, meats, and cooled pasta.
Just before serving, add lettuce and tomatoes and drizzle with dressing; toss to coat.
Serve.
