Description
This delicious salad has all of the flavors of an Italian sub sandwich but replaces the bread with pasta. It's a hearty salad that can be served as a main dish.
Ingredients
- Dressing:
- 1/4 c. olive oil
- 1/4 c. balsamic vinegar
- 2 garlic cloves, minced
- 1 t. Dijon mustard
- 1/4 t. kosher salt
- 1/8 t. black pepper
- Salad:
- 2 c. uncooked spiral pasta (rotini)
- 1 c. any color bell pepper, diced
- 3/4 c. sliced pepperoncini, drained
- 1/2 red onion, sliced
- 4 oz. cubed Provolone cheese
- 2 oz. thinly sliced deli ham
- 2 oz. thinly sliced hard salami
- 5 c. lettuce, chopped
- 3/4 c. cherry or grape tomatoes, quartered
Steps
- In a small bowl, whisk together the dressing ingredients; set aside.
- Cook pasta in well salted water according to package directions; drain; cool; set aside.
- In a large bowl, combine bell pepper, pepperoncini, red onion, cheese, meats, and cooled pasta.
