Very little clean up and preparation while keeping your kitchen cool is why you'll love these dinner packets. But, best of all, they are delicious and easy with only 5 ingredients.
12 oz. smoked sausage (andouille or kielbasa), cut into 1" pieces
1 1/2 lb. baby Yukon gold potatoes, quartered
8 oz. fresh green beans, trimmed and halved
1 T. Cajun seasoning
2 T. unsalted butter, melted and cooled
Preheat an outdoor grill to medium-high heat.
Prepare four 8x8 inch sheets of heavy-duty aluminum foil; set aside.
Place sausages, potatoes, and green beans in a large bowl; add Cajun seasoning and butter; toss to coat.
Evenly divide potato/green bean mixture between the 4 pieces of aluminum foil. Fold opposite sides of each piece of foil up into a tight packet that is completely sealed; crimp the edges closed.
Place packets on the preheated grill. Cover; grill until potatoes are fork tender, about 25 minutes.
Be careful when opening the packets, as they will be hot and steamy.
4 servings.
*These packets could also be baked at 425 degrees F in an oven for 20 to 25 minutes.
