You'll be asked to make this French Toast often, it's so good. It's easy to prepare and delicious.
4 T. butter
1/4 c. light brown sugar
pinch ground cinnamon
3 ripe bananas, peeled, cut into 1/2-inch-thick rounds
4 oz. cream cheese, at room temperature
12 thick slices Brioche challah, French bread, or Italian bread
Egg Batter:
4 large eggs
1 c. whole milk
1 t. ground cinnamon
1 t. rum extract, optional
Toppings:
butter, maple syrup, fruit, whipped cream, jam or powdered sugar
Melt butter in a large skillet over medium heat. When melted, add the brown sugar and cinnamon; stir until the sugar melts into the butter and becomes a sauce. Add bananas; toss together.
Cook until bananas are slightly soft and incorporated into the sauce. Transfer to a bowl; cool completely. You could place it in the refrigerator to speed it up. Once cool, add cream cheese; mash lightly.
Gently spoon 1/6 of the cream cheese mixture on 1 slice of bread; top with another slice. Repeat with remaining bread.
Refrigerate the prepared bread slices to keep filling firm while preparing the batter.
Egg batter: Add the eggs, milk, ground cinnamon and rum extract to a medium shallow bowl; mix well; set aside.
In a large skillet, melt 1-2 T. butter over medium heat. While butter is melting, dip a few pieces in the milk mixture for 3 seconds per side. Place in the skillet; cook 2-3 minutes per side until golden brown. Wipe out skillet in between batches as necessary.
Keep warm in the oven on a baking sheet at 200 degrees F. until ready to serve.
Serve warm with choice of butter, maple syrup, fruit, whipped cream, jam or powdered sugar.
