Mushroom, Spinach and Feta Omelet

Description

Make an amazingly delicious breakfast that's easy and quick to make. It can be on the table in about 30 minutes.

Ingredients

1/2 T. butter
4 oz. mushrooms, sliced
2 oz. spinach
minced garlic
touch of butter
3 eggs, lightly beaten
1 oz. crumbled feta

Melt 1/2 T. butter in a small non-stick pan or skillet. Add mushrooms; saute until golden brown. Add spinach and garlic; saute until spinach is wilted. Set aside, keeping warm.

Melt a touch of butter in another small non-stick pan/skillet. Add the beaten eggs; spread out to cover the entire bottom of the pan. Cook until the top is almost set.

Add the mushroom mixture and the feta cheese to one side of the eggs on one side. Fold the uncovered half of the eggs onto the spinach mixture.
