This is a light main dish that's super easy and quick to make. Not only is salmon healthy and good for you but it's delicious too.
1 lb. salmon fillet
1 T. packed brown sugar
1 T. butter, melted
1 T. olive or vegetable oil
1 T. honey
1 T. soy sauce
1 T. Dijon mustard
1 clove garlic, finely chopped
Place salmon, skin side down, in a shallow glass or plastic dish.
In a small bowl, mix remaining ingredients; spread over salmon. Cover; refrigerate at least 15 minutes but no longer than 1 hour.
Preheat oven to broil.
Remove salmon from marinade; reserve marinade.
Place salmon, skin side down, on a rack in the broiler pan. Broil with top 4 - 6 inches from the heat 10 - 15 minutes, brushing 2 or 3 times with the marinade, until fish flakes easily with fork. Discard any remaining marinade.
