Roasted Chili-Lime Cod Fillets

These cod fillets will be the focus of an easy weeknight meal. The fillets are rubbed with a dry rub that's full of flavor, are roasted to perfection and served with a delicious lime-butter sauce.

Ingredients

1 t. paprika
1 t. dried parsley
1/2 t. oregano
1/2 t. chili powder
1/2 t. garlic powder
1/4 t. cumin
1/4 t. salt
1/4 t. freshly ground black pepper
1/8 t. cayenne pepper

2 T. extra virgin olive oil, divided
2 cod fillets
1 T. unsalted butter
zest and juice of 2 limes

In a small bowl, combine all seasonings and spices; mix well.

Brush the cod fillets with 1 T. olive oil; rub the fillets with the spice mixture, using all of the rub.

Refrigerate the cod for at least 30 minutes, or up to 12 hours.

When ready to roast the cod, preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil.

Place the cod filets on the prepared baking sheet. Bake for 10-12 minutes. The cod will flake easily and be opaque throughout when it’s cooked through.

Meanwhile, in a small saucepan, melt the butter with the remaining 1 T. olive oil; add the lime zest and lime juice; swirl the pan to mix.

Serve topped with the lime butter.
