This tasty sandwich is a bit messy to eat but oh, so good. The grilled, buttery sourdough bread is stuffed with crispy bacon, cheese and yummy guacamole.
1 T. salted butter, at room temperature
2 slices sourdough bread
1/2 c. shredded jack and cheddar cheeses, at room temperature
2 T. guacamole, at room temperature
2 slices bacon, cooked
1 T. crushed tortilla chips, optional
Butter one side of each slice of bread, sprinkle half of the cheese on the unbuttered side of 1 slice of bread, followed by the guacamole, bacon, tortilla chips, remaining cheese; top with the remaining slice of bread with the buttered side up.
Grill in a preheated skillet over medium heat, until golden brown on both sides and the cheese has melted, about 2-4 minutes per side.
