6 c. water
1 c. white sugar
2 T. salt
6 - 6 oz. frozen cod fillets
melted butter (for brushing and dipping fillets
paprika and lemon-pepper seasoning, to taste
1/2 lemon

Preheat broiler. For easier clean up, wrap the broiler pan with aluminum foil that is carefully fit to the grooves of the pan so that the fish doesn't sit in liquid; spray with non-stick cooking spray.

Mix together the water, sugar, and salt.

Place the cod in a large saucepan; pour the water mixture over the fish. It should completely cover the fillets. Add more water if it doesn’t. Bring the water to a boil over a medium-high heat. Boil 3 - 5 minutes, depending on the thickness of the fillets.

Remove fish from water; brush with melted butter; season with paprika and lemon-pepper. Squeeze some lemon juice over the top.

Broil for about 7 minutes on low or until the fillets are opaque and flake with a fork.

Serve with individual ramekins of melted butter.
