Whip up a quick, easy and satisfying weeknight dinner that can be on the table in less than 30 minutes. It's so tasty, even the pickiest of eaters will enjoy it.
1/2 onion, diced
1 lb. lean ground beef
15 oz. canned diced tomatoes
1 1/2 c. frozen peas and carrots
3/4 c. white rice
2 c. beef broth
1 t. dried oregano
1 t. garlic salt
1/2 t. dried basil
1/2 t. black pepper
1 1/2 c. shredded Mozzarella cheese
Brown the ground beef and onion in a large skillet until no longer pink; discard excess fat.
Add the tomatoes, veggies, rice, beef broth, oregano, garlic salt, basil and pepper; stir. Bring to a light boil; reduce heat to a simmer; cover; cook until rice is tender, about 17 minutes.
Fluff rice with fork. Top with the Mozzarella cheese. Cover; cook for about 3 minutes until cheese melts.
Serve, garnished with parsley, if desired.
