This seafood dinner is a quick and healthy one that comes together in no time. It's served with a mango salsa that's salty and sweet with a little bit of a kick.
3 Mahi Mahi fillets
2 T. olive oil
Blackening Seasoning:
1 t. garlic powder
1 t. onion powder
1 t. oregano
1 t. salt
1 t. pepper
1 t. paprika
1 t. thyme
1/4 t. cayenne
Mango Salsa:
1 c. cherry or grape tomatoes
1/2 c. mango
1 medium avocado
1/4 c. cilantro
freshly squeezed juice of 1 lime
Chop tomatoes, avocado, mango, and cilantro; add to a large bowl; mix with the lime juice; marinate in the refrigerator while preparing the fish.
To a bowl, add all Blackening spices together; stir.
Pat fish dry with paper towels. Add the seasoning to all sides of the fish.
Add olive oil to a skillet over medium-high heat; when hot, add fish to the skillet. Cook for 4 minutes on one side; turn over; cook second side for another 4 minutes.
Serve the fish topped with the Mango Salsa.
