This gorgeous salad is bright and colorful, and delicious. It's full of healthy ingredients and is served with a yummy sesame ginger dressing.
Ingredients
- Sesame Ginger Dressing:
- 1/4 c. soy sauce
- 1/4 c. rice vinegar
- 2 T. fresh ginger, minced or grated
- 3 cloves garlic, minced
- 2 T. raw honey
- 1 T. sesame seeds
- 1/4 t. black pepper
- 1/4 red pepper flakes
- 2 T. sesame oil
- 1 T. olive oil
- 1 lb. boneless, skinless chicken breasts
- salt and pepper
- 10 oz. spring mix
- 1/2 c. snow peas, cubed
- 3/4 c. red bell pepper, julienned
- 3/4 c. mandarin oranges, drained
- 1/2 c. carrots, grated
- 1/2 c. green onions, sliced
- Garnish:
- sesame seeds
- lime wedges
- cilantro, optional
Steps
- Preheat a grill to medium-high heat, about 350-375 degrees F.
- Sesame Ginger Dressing:
- In a small bowl, whisk together all dressing ingredients until well combined with no oil and vinegar separation.
