This gorgeous salad is bright and colorful, and delicious. It's full of healthy ingredients and is served with a yummy sesame ginger dressing.
Sesame Ginger Dressing:
1/4 c. soy sauce
1/4 c. rice vinegar
2 T. fresh ginger, minced or grated
3 cloves garlic, minced
2 T. raw honey
1 T. sesame seeds
1/4 t. black pepper
1/4 red pepper flakes
2 T. sesame oil
1 T. olive oil
1 lb. boneless, skinless chicken breasts
salt and pepper
10 oz. spring mix
1/2 c. snow peas, cubed
3/4 c. red bell pepper, julienned
3/4 c. mandarin oranges, drained
1/2 c. carrots, grated
1/2 c. green onions, sliced
Garnish:
sesame seeds
lime wedges
cilantro, optional
Preheat a grill to medium-high heat, about 350-375 degrees F.
Sesame Ginger Dressing:
In a small bowl, whisk together all dressing ingredients until well combined with no oil and vinegar separation.
Chicken:
Season both sides of the chicken breasts with salt and pepper.
Place chicken on the grill; grill each side for 5-6 minutes, or until the internal temperature reaches 165 degrees F. Remove chicken from the grill; transfer to a platter; let rest for 5 minutes; slice the chicken.
Salad:
In a large bowl, add the fresh spring mix, snow peas, red bell pepper, carrots, green onions, mandarin oranges, and the sliced grilled chicken.
Serve salad garnished with sesame seeds, fresh cilantro, lime wedges and Sesame Ginger Dressing.
