Bring a little flavor of the islands to your home with this easy to make Mango French Toast.
butter or oil, to grease the skillet
8 slices Hawaiian sweet bread
3 large eggs
1/4 c. milk
1 mango, pureed
Topping choices: fresh fruit, syrup, whipped cream, jam, etc.
Heat a large, non-stick skillet over low-medium heat. Add a bit of butter or oil to grease the skillet.
In a small bowl, beat eggs, milk, and pureed mango.
Dredge each slice in the egg mixture, allowing it to soak for about 5 seconds; allow excess egg mixture to drip off.
Place dredged slices in hot, greased skillet. Cook for 3-4 minutes per side or until golden brown.
Serve with choice of toppings.
4 servings.
