With just a few simple ingredients and spices and minimal prep time you can make a budget friendly, delicious and flavorful dinner in your slow cooker.
1 lb. ground beef, browned
3 medium Russet or Yukon Gold potatoes, peeled and diced into large pieces
4 medium carrots, peeled and cut into ½ thick slices
1 medium onion, diced
14 oz. can diced tomatoes
2 c. beef or chicken broth
1 t. salt
1 t. black pepper
2 t. Italian seasoning
1 t. onion powder
2 t. minced garlic
In a skillet, brown the ground beef, discard excess grease.
Add the browned ground beef, potatoes, carrots and onions to a slow cooker; stir.
Add the diced tomatoes, broth, salt, pepper, Italian seasoning, onion powder and minced garlic; stir.
Cover; cook on Low 6-7 hours or on High 3-4 hours until the potatoes are tender.
Serve warm.
