This economical casserole is not only easy but it's delicious too. Even the kids will enjoy it.
1 lb. ground beef (or ground turkey or chicken)
15 oz. can Ranch Style beans, undrained
10-12 oz. bag tortilla chips, crushed (might not use the whole bag)
10 oz. can Ro-tel diced tomatoes with green chilies, with juices
1 small onion, chopped
2 c. shredded Cheddar cheese, divided
1 oz. package taco seasoning
10.5 oz. can cream of chicken soup
1/2 c. water
sour cream and salsa, for serving
Preheat oven to 325 degrees F. Grease a 9x13 inch casserole dish.
In a large skillet, brown meat; discard excess grease. Add beans, tomatoes, onion, taco seasoning, soup and water; stir. Simmer over medium-low heat until well combined and heated through.
To the prepared casserole dish, add a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheese. Repeat layers. Cover with aluminum foil.
Bake 20-30 minutes, or until hot and bubbly.
If desired, remove foil and place under the broiler just until the cheese starts to brown.
Allow to sit for 5-10 minutes before serving.
Serve, topped with sour cream and salsa.
