Description
This economical casserole is not only easy but it's delicious too. Even the kids will enjoy it.
Ingredients
- 1 lb. ground beef (or ground turkey or chicken)
- 15 oz. can Ranch Style beans, undrained
- 10-12 oz. bag tortilla chips, crushed (might not use the whole bag)
- 10 oz. can Ro-tel diced tomatoes with green chilies, with juices
- 1 small onion, chopped
- 2 c. shredded Cheddar cheese, divided
- 1 oz. package taco seasoning
- 10.5 oz. can cream of chicken soup
- 1/2 c. water
- sour cream and salsa, for serving
Steps
- Preheat oven to 325 degrees F. Grease a 9x13 inch casserole dish.
- In a large skillet, brown meat; discard excess grease. Add beans, tomatoes, onion, taco seasoning, soup and water; stir. Simmer over medium-low heat until well combined and heated through.
- To the prepared casserole dish, add a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheese. Repeat layers. Cover with aluminum foil.
