Whether you serve these for breakfast, brunch or dinner, everyone will love these corn fritters. They are easy to prepare and can be ready in just minutes.
3 c. fresh corn kernels, (or canned or thawed frozen corn kernels, drained)
1 c. all-purpose flour
1 T. sugar
1 t. baking powder
1/2 t. salt
1/4 t. black pepper
2 large eggs, lightly beaten
3/4 c. heavy cream , coconut cream or whole milk
vegetable oil, for frying
sliced green onions, for serving
sour cream, for serving
In a large bowl, stir together the corn kernels, flour, sugar, baking powder, salt and pepper. Stir in the beaten eggs and heavy cream until the batter is well-combined.
Line a plate with paper towels.
Coat the bottom of a large sauté skillet with vegetable oil; place over medium-high heat. Once the oil is hot, scoop 2-3 T. mounds of corn batter into the skillet, spreading it lightly into a flat, circular shape. Cook fritters for 2 - 3 minutes; flip; cook another 3 minutes until golden brown and cooked through. Transfer the fritters to the prepared plate; season immediately with more salt; repeat the cooking process with the remaining batter, adding more oil to the skillet as needed.
Serve, garnished with sour cream and green onions.
Makes 15 fritters.
* Can be served with syrup or honey as well.
