One Pot Cheeseburger Casserole

Description

Everyone wants an easy meal to serve on busy weeknights. This one is quick, simple, economical and delicious.

Ingredients

3 1/2 c. freshly shredded Cheddar cheese, at room temperature, divided
1 lb. lean ground beef
salt and pepper, to taste
1 small yellow onion, diced
2 cloves garlic, minced
2 t. Worcestershire sauce
2 T. tomato paste
4 c. beef broth
16 oz. elbow macaroni, uncooked
3/4 c. sour cream, at room temperature
1/2 c. whole milk, at room temperature, divided
chopped fresh parsley, for garnish

Shred cheese; set aside, keeping it at room temperature.

In a large pot over medium heat, cook and crumble ground beef with the onions; discard excess grease. Season with salt and pepper.

Add garlic; cook for another minute. Add the Worcestershire sauce and tomato paste; stir until combined. Add beef broth and the uncooked macaroni; stir. Bring to a gentle simmer over medium or medium-low heat.

Cover; cook for 5 minutes. Uncover; stir; cover; cook for 5 more minutes, or until just al dente. Reduce heat to low.

Stir in the room temperature sour cream and half of the milk. Only add the other half of the milk if needed.

Gradually sprinkle and stir in 2 1/2 c. shredded Cheddar cheese.
Once the cheese has melted and has uniform consistency, top with the remaining cheese.

Cover; heat for another 2-3 minutes, until the cheese has melted.

Serve, topped with parsley.
