Everyone wants an easy meal to serve on busy weeknights. This one is quick, simple, economical and delicious.
Ingredients
- 3 1/2 c. freshly shredded Cheddar cheese, at room temperature, divided
- 1 lb. lean ground beef
- salt and pepper, to taste
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 2 t. Worcestershire sauce
- 2 T. tomato paste
- 4 c. beef broth
- 16 oz. elbow macaroni, uncooked
- 3/4 c. sour cream, at room temperature
- 1/2 c. whole milk, at room temperature, divided
- chopped fresh parsley, for garnish
Steps
- Shred cheese; set aside, keeping it at room temperature.
- In a large pot over medium heat, cook and crumble ground beef with the onions; discard excess grease. Season with salt and pepper.
- Add garlic; cook for another minute. Add the Worcestershire sauce and tomato paste; stir until combined. Add beef broth and the uncooked macaroni; stir. Bring to a gentle simmer over medium or medium-low heat.
